My Rainbow Cake

I can't claim that rainbow cakes were my idea because they have been the rage for a couple of years but I do want to show you my take on the rainbow cake. There are so many variations but this is just how I choose to make it.
I do love baking and have tried this recipe a few times but in no way does that mean I am baker.

The actual cake is not my recipe. I borrowed the recipe from the  BBC but you can just use your favorite cake mixture.

To start with I combined enough ingredients to make 3 cakes but used them to make 6 thinner cakes. I then separated my batter into 6 different bowls for colouring.

One little tip I have is to use a ice cream scoop to separate the mixture as this way you will get a move even distribution.

You then want to die the cakes with your chosen colours. Another tip is to do this with gel colouring as teh colour comes out truer and  liquid colouring might make your mixture too runny.
I didn't make all the colours of the rainbowinsteah I choose to do red, orangey yellow, green, blue, pink and purple.

Once all the cakes are cool stack them on top of each other, gluing them together with butter cream icing.
So that the icing sets better and the cake doesn't wobble when it comes to icing the outside leave it in the freezer for 10-15 minutes.

While the cake is in the freezer separate your icing into as many colours as you want. I did the 7 colours of the rainbow. As you did with the cake batter dye them and then place them in to piping bags. If you don't have plastic bags just use a freezer bag which I did with the orange as I ran out of piping bags.

I used shop bought icing as homemade icing can be slightly yellow in colour which will change the colour of the dye.

I then just piped little swirls on the cake. The swirls kind of look like flowers which is cool if you use reds and pinks.

As you can see you don't have to be an artist for the cake to look okay.

Just to tidy up the edge I piped white swirls around the bottom.

And that is my finished rainbow cake. Let me know if  you have any questions or there is anything you would have done differently. :)

Lots of Love Emma
